Fund Raising Foods - My Inner Granny Has A Sweet Tooth

 Tomorrow is a bake sale for The Relay For Life fundraiser at work. I decided to bring two things, well three if you count the two different flavor cookies.


 First off was a low fat lemon/banana muffin. It's fine on its own, but my inner granny has a sweet tooth and needs powdered sugar on top. Technically, this is more like a low fat cup cake, and VERY easy to make. It's my take on a weight watchers recipe a friend gave me.

1 cake mix of choice (today's was lemon)
2 egg whites
2 ripe bananas
1/2 cup of lemon juice or water.
(I actually did not have a whole half cup worth of lemon juice, so I added a bit of water to make up the difference)
Bake in the oven at 350 for about 15 minutes

If you want to try another variety of cake mix, you can get a spice cake mix, and rather than use bananas, use 1 cups worth of pure pumpkin in a can, 1 egg white and 1/2 cup of water. These are great in mini cupcake sizes as a kind of a pop in your mouth and go snack, and they do freeze well if you want to save them for later.


Gooey Butter Cookies

Wow! These were super easy to make, but very sweet! The flavor combinations are endless, or at least as endless as the availability of cake box flavors in your grocery store.
Today's flavors were Yellow Butter Cake and Chocolate Fudge.

You will need
1 box of cake mix (your choice)
1/2 cup of softened butter
1 8oz package of softened cream cheese
1 egg
1 tsp of vanilla extract
about 1 cup of powdered sugar

Mix the cake, butter, cream cheese, egg and vanilla all together until smooth
Cool the dough in the freezer for about 1/2 of an hour
(it makes rolling the dough much much more easy)
Roll the dough into balls with your hand (about an inch in size)
If you are very OCD and want the perfect size cookie, use a melonballer. If you are like me, and just want to get the whole process over with, eyeball it.
Roll the dough in the powdered sugar
Place on an ungreased cookie sheet about an inch apart.
Bake at 350 for 13-14 minutes (no longer)
This is a very soft cookie, so try not to over bake! Much like gooey butter cake, it will seem a little undone, but it's not.
