Eggs In A Corn Tortilla

I wasn't in the mood for regular eggs and toast this morning, so I decided to try out something I read in a book a few days ago. Eggs in Corn Tortilla. Super easy, and the corn tortilla just give a really nice crunch and flavor with the fried egg. It's Muy Yummy!

Start with coating the bottom of your fry pan with butter on medium heat. (You don't need a lot of butter. I actually ended up draining some of my butter into the sink because I put too much in).

With a knife (or if you have a circular cut out) cut a circle into the middle of your corn tortilla. It does not have to be a huge circle, but you want it large enough so that the yolk and a little bit of egg white can rest in the center, and it's easily flippable.

The hole should pretty much look like this. If you are OCD, do not look at this picture. My circles are never perfect, and I like them that way!!!

Place your tortilla doughnut looking thingy into your pan, and let it rest for just a few seconds. Then turn it over once. Let it rest for just a few seconds on the heated pan.

Crack your egg into the center of the cut out you made.
Actually, it really doesn't matter what kind of cut out you make. You could make a square, a rectangle, heck, if you are really mathematical, you could make an octagon. It doesn't really matter so long as there is some space empty in the middle of your tortilla.

Once your egg has fried up enough on the bottom, carefully flip your tortilla and egg so that the other side cooks. This part only takes a few seconds. Unless you really like over cooked egg yolk.

You can add just about anything after you set it onto your plate. A little avocado, tomato, or onion, a dollop of sour cream. I like to sprinkle some salt and pepper on mine, but some taco seasoning would be a great touch too!
