We are a meat and potatoes eating kind of family. We're also a dessert eating kind of family, but today is all about hearty food.

Spicy Roasted Potatoes With Cheese

Start with a teaspoon of your favorite Cajun seasoning (or teaspoon of cayenne pepper).
Add two teaspoons of lemon pepper and one package of a ranch dressing mix.
1 1/2 teaspoons of garlic powder... or in my case, your favorite garlic based seasoning.
Mix all that together.
Blend it all together and add 3/4 cup of vegetable oil.
Add a little fresh cracked pepper (or just stuff from the pepper shaker) and whisk it all up.
Cut up about 6 to 8 potatoes. You can use regular potatoes, or red potatoes. It's really up to you, and what you like. Or in my case, what I have in the refrigerator.
Get a large plastic, sealed, bag, and put yer taters in the bag.
Quarter up about two onions. (No need to peel them all a part, they will separate while roasting)
Mix up your onions and potatoes while they are in the bag, and add your spicy mixture.
Seal the bag, and mush it all up to coat all the potatoes and onions.
Set aside for about an hour.
Once your veggies have marinated, pour everything (oil included) in to a baking dish. You can add some dried parsley flakes if you want, but definitely add salt and some more pepper. Then place in a pre-heated oven at 424 degrees for about an hour. You will need to turn the potatoes and onions every 10 minutes or so. You know it's done when the potatoes are fork tender.
While the potatoes are roasting, go get your 2 1/2 year old niece to make funny faces at you.
When your potatoes are done, drop some graded cheese over the top and watch it melt. The more cheese the better.
I have a theory... cheese and bacon make everything better. I've never failed with either.
