For breakfast this morning I decided to roast up a sweet potato with onions, brussels sprouts, and blueberries.

It's so easy to do! First, Preheat your oven to 350. Next, Cut your vegetables up into medium-size chunks. For this recipe I used one large sweet potato, one large onion, about four slices of bacon thinly cut, and about nine brussels sprouts that I cut in half.
Season with salt and pepper. Drizzle a little bit of olive oil over the top and stir to cover the veggies, then drizzle some honey over the top and mix as well.
Bake for about 45 minutes, and then check to make sure that the brussels sprouts are caramelized and the potatoes are cooked through. Next add some fresh blueberries and then cook for about 20 to 30 more minutes. You should end up with slightly caramelized vegetables.
The end result is awesome. I drizzled a little more honey over the top and sprinkled a little cinnamon. Everything practically melts in your mouth, but the great thing about this dish is that each flavor is still unique as you bite into it. It just all seems to go together so well.
