Baked Caramelized Pear Pancakes

I've never made a "pancake" quite like this before. It's almost more like a dessert than it is a breakfast item, but once you try it you will not regret it.


Mine ended up a little over done on the sides because my pan was too small and my oven kind of sucks, but on the whole I think it turned out both pretty and tasty.


Start with 3/4 cup of flour mixed with 1/2 a teaspoon of salt in a bowl. Make a well in the center and crack four eggs into the center.


Make sure your oven is pre-heated to 400°. Place your pan in the oven and melt 3 tablespoons of butter in it.


Slowly whisk your eggs in to the flour and slowly pour 1 cup of milk in as you whisk.


Add 1 teaspoon of vanilla extract.


Add a little over half of your melted butter.


Mix together and set aside.

In the mean time, slice up a pear.


Place your pan on your stove top on medium high heat. Drop in your pears with your remaining butter. Add the juice of half a lemon, two tablespoons of sugar, and one teaspoon of cinnamon.

Cook over your stovetop until your sugar starts to caramelize and your pears are tender.


Next, take your batter and pour that over your pear mixture.


Place it all in to your oven and bake for about 20 to 25 minutes.

It will all rise and fluff up and look really beautiful. Even if the sides are a little overly brown like mine, it's still all good. The texture is not like your typical pancake, it's more like a custard.



I dusted my pancakes with powdered sugar and drizzled with honey, but you can pretty much put whatever you like on it.
