Spinach Frittata

I've wanted to make one of these before, I just never got around to it until this morning.


It's a super simple recipe. I whisked 3 eggs with a healthy spoonful of light sour cream. I added a dash of salt and pepper, about 1/4 cup of shredded cheese, and some fresh spinach.

I heated up a teaspoon of coconut oil in a small cast iron skillet (make sure all the sides are coated), then poured my egg mixture into the pan. I then placed it in the oven at 350° for about 15 minutes, at this point I dropped some more shredded cheese on top and let it go for about 5 more minutes.

Pretty simple!


For the hash, I roasted sweet potatoes, onions, a a lice of bacon cut up, and an apple. 

All in all it made a pretty yummy Sunday morning brunch.
