So I made a steak and asparagus frittata. Naturally.
Hello!
All I did was heat up a pan with a little coconut oil in it. I threw in some diced onion, bell pepper, cut up asparagus, and my left over steak. While all that was in sautée mode, I whisked up five eggs with a heaping spoon full of sour cream, a pinch of salt and pepper and half a cup of shredded cheese.
Once my egg mixture was ready, I poured it into my pan of meat and veggies. I let it bubble for a few minutes while my oven heated up to 350°. Once that was good to go, I put my pan in the oven for about ten minutes to set up.
After ten minutes, I sprinkled more cheese on top and let it bake for about 15 more minutes.
It ended up looking like this:
I know, right?
It comes out of the pan really easy and looks much fancier than it really is.
Kind of looks like a pizza with extra cheese.
I heart frittatas.
