Chococheerio Bars! It's what shouldn't be for dinner, but is!

Have you ever tried Chocolate Cheerios yet? They are my new cereal of choice. I could have it for breakfast, lunch and dinner if I truly did not care to cook. They are yummy, so why not make them into a sweet chocolaty snack? If you like Little Debbie's you will like these. The taste and texture is very similar.

You want to start with 3 cups of Cheerios. You can use plain, or if you are like me, and feel that there is never too much chocolate in your dessert, use Chocolate Cheerios. Just pour the 3 cups in a cake pan. No need to grease the bottom or anything.

Next drop in 1 package, or 1 cup of chocolate chips.

Mix the Cheerios and chocolate together.

If you want a little extra umph, add some marshmallows. It's best to add mini marshmallows, but since I didn't have the mini kind, I just chopped up some fat free marshmallows (cuz this recipe is all about cutting down on the fat. (cough. cough.)

Mix all three ingredients together, and set aside as you start the peanut butter mixture.

In a sauce pan, pour 1/2 cup of Corn Syrup.

Add 1/4 cup of packed brown sugar.

Stir over medium heat.

Add 1/2 teaspoon of salt.

Combine all ingredients and bring to a boil.

Remove form heat and add 1 cup of peanut butter.

and 1 teaspoon of vanilla extract. Combine until the mixture is smooth and light brown.


Pour onto your cheerios, then quickly combine.

Yes, I know, it looks like something not very pretty, but trust me, it all works out in the end.

Try to make sure everything is incorporated together, but it's okay if you see some of the peanut butter mixture in chunks. Once it cools down, it's almost like a caramel.

Place your pan in the refrigerator for 1 hour (or 45 minutes if you are impatient and have an intense chocolate craving like I did)

After about an hour, you can start cutting. Use a knife, or a pizza cutter (which I find much easier to use)

And here ya go! Chococheerio Bars!
