Sunday Morning Breakfast Bake: Potatoes And Eggs


Yum! Hearty and filling! I love making my eggs this way. It's so easy and I don't have to mess with anything really. Plus, you can pretty much add whatever you want. It just all depends on what you like.

Start with quartering some new red potatoes and chopping up an onion. Place them in a pan or skillet sprayed with Pam or a little olive oil.


Add a bell pepper


Some mushrooms and seasoning of your choice.


Place in the oven for about 15 minutes at 350°. Next I added some country ham, then put back in the oven for another 15 minutes.


Loosely chop some spinach and mix into your roasted veggies.


Dig a few wells to fit your eggs.


Crack an egg into your well.


Drop some cheese across the top and add some cherry tomatoes.


Put back in the oven and bake your eggs until they are done to your liking. It might take about 7 to 10 minutes depending on how you like your yolks done.

Grocery list:
5-6 red potatoes
1 bell pepper
1 onion
1 cup of spinach
Grated chees (about 1/2 a cup)
3-4 eggs
1/2 cup of sliced mushrooms 
Cherry tomatoes
Salt and pepper to taste
Ham or sausage
