Quinoa Breakfast Bowl

Something new to me, but a great surprise for a first time user of quinoa. 

A quinoa breakfast bowl with roasted butternut squash, strawberries, apples, and blueberries.


Oh, and bananas and almonds.

I started out with this on a pan. I drizzled coconut oil on top rather than olive oil....


I added this....


And this....


Just sprinkle over the top to your taste. Coconut palm sugar tastes sort of like a grainier brown sugar. A little goes a long way.

Just in case you want to know...


So, I put the pan in my oven at 350°. 


Okay, I just wanted an excuse to take a picture of my new oven. Sue me.

I let it roast for about a half hour total, stirring it around after 15 minutes. At the half hour mark I started on part two.

I rinsed 1/2 a cup of quinoa and added it to one cup of water, covered it and let it boil until the water evaporated and the seeds expanded.


Basically, I ended up with this....


I'm saving part of it for a salad later.

Then I added my butternut and fruit mix.


I added half a cup of almond milk, fresh bananas, and sliced almonds.


What I ended up with was a great mix of sweet and nutty goodness. I think next time I'd like to try this with sweet potato.

Oh, and later I blended the butternut and fruit mixture with a few other things to make this....


But I'll save that recipe for later. I want to doctor the recipe up a bit before posting.
