I have to make a confession: I really do not love chicken all that much. It's just not my go to poultry, but I think if I make it the way I just made it tonight from now on, I will be a converted chicken breast lover.
This was a cool combination of sweet, spicy and savory, and it's all thanks to being broke ass poor this week. I need to wait to go to the store and just use what I have until payday, but it's all good because it's making me a little more creative in the kitchen.
I coated my pan with a little coconut oil and 4 round slices of onion.
In a bowl, I mixed together 3 tablespoons of hoisin sauce with 3 tablespoons of raw honey.
I then added 2 teaspoons of coconut Aminos. You can add soy sauce instead, but I like the lighter flavor of the Aminos myself.
Next I added 2 teaspoons of chili pepper paste. Okay, I actually added 3, because I'm no wuss. Don't be a wuss, okay?
Place your chicken breasts on top of your onion and baste with your sauce. Peel and slice up 3 large, ripe, peaches, and add that to your pan.
Place in the oven at 350° and let bake for 15-20 minutes. Baste and place back in the oven for 10 more minutes. Baste once more and let it go in the broiler for 5 minutes to caramelize the top of your chicken breast. Baste one last time and place back in your oven to broil for 2-3 more minutes.
This was at 15 minutes.

This is me dipping the chicken in the sauce. You must dip it in the sauce. You really really really must.
And the peaches... Divine! Sweet and spicy just like I like em.
Make some rice and drizzle some juice over everything. You will miss out if you do not drizzle. Heck, take your remaining juice and put it in a bowl so you can dip your chicken as you eat!
So anyway, I may be a little on the poor side this week, but the good news is I am not starving!
