I'm not sure if this should be categorized as breakfast or dessert, but since I made this at 9 A.M. I'm going with breakfast. Or maybe I can call it Breassert!
It's pretty simple to do. First I fried up some pieces of bacon until they were golden brown, but not burned (like my first two attempts this morning).
Then I peeled and sliced two peaches, cutting them in to wedges.
I placed those in a cast iron pan and placed small pieces of butter in it, then sprinked sugar over the top.
The pan O' peaches went under the broiler until the sugar melted and the tops of the peaches caramelized.
I sprinkled the bacon over the peaches in the last second, shaking the skillet around a bit to let the liquified sugar coat the bacon.
While my peaches were boiling I cooked about half a cup of old fashioned oats per the instructions, then placed half of that on my favorite plate. I'll save the other half for another breakfast.
Next up, pour your peaches and bacon over your oatmeal. I topped it all with sweetened whipped cream and cinnamon, which made my taste buds very very happy.
See the thickened sugar? That's good stuff right there. This is peaches and cream oatmeal done right! No need to buy the nasty processed bagged peaches and cream oatmeal, that's for wussies!
Pretty sure this qualifies as my cheat meal of the week. I will be going yo the gym later to work some of this off.... Ha. Right.
