I was craving some more pulled pork, but I also wanted to find a way to keep it somewhat low on carbs, so I decided to go with a lettuce wrap. I was not disappointed.
I made the pork with white onions and apples along with a little spice from cumin and red peppers. The result was so nice, I will definitely be doing this again.
I sliced up one white onion and two red apples. I think they were pink lady apples, not sure it really matters though.
While I was slicing the fruit and veg, I heated up a pot with just a little bit of coconut oil, then seared chunks of pork shoulder that I seasoned with salt, pepper, garlic, red pepper flakes and cumin. Once that was going good, I added the apple and onion.
Next, I added two cups of chicken stock and one cup of water.
Then I added half a bottle of corona.
Just don't let the rest of it go to waste!
Finally, I added a tablespoon of brown sugar. It helps temper down the beer taste and gives it a slight BBQ sauce flavor.
Cover and cook on low until the meat falls a part.

I added a little guacamole and sour cream to take it over the top. So good!
