Easy Breakfast

Chilaquiles, or at least my version of it.
Start with a small cast iron pan if you have it. Drizzle a little extra-virgin olive oil.
Crumble some corn tortilla chips into the pan. You can use fresh if you have it or just open up a bag like I did because I'm lazy.
Preheat your oven to 350°. Take about a quarter of a cup of a red onion, then take some sausage and brown it all up in a pan on your stovetop.
Once your meat is cooked, scramble a couple of eggs into your mixture.
Next, drop your egg and sausage mixture over your corn tortilla chips.
Drizzle a little hot sauce over your sausage and egg; seriously you could just eat it right here as is.
But, you're not done yet. You need to sprinkle some cheese over the whole thing. You can choose whatever cheese you want, Mexican cheese or whatever floats your boat. I had mozzarella cheese, so that's what I went with today.

About this much will do.
Place in the oven for about 15 minutes or until all your cheese is melted.
Looks pretty freaking awesome so far, but you're not done yet.
Drizzle a little more hot sauce over the top, or salsa, add some avocado if you have it or maybe some sour cream, and go to town.
