This one was super easy. Cut an eggplant into inch and a half slices (too thin and the eggplant can get mushy). Drizzle with olive oil and throw a little pinch of salt and pepper across the top. Cover with cheese and bake for 20 to 30 minutes at 350°.
I made the ragu with browned lean ground turkey meat, garlic, diced onion, bell pepper, mushrooms and Italian seasonings (dried basil and oregano). Then add a can of diced tomatoes and a can of tomato sauce. Cook down until thickened.

Very filling a a great way to utilize your veggies!
